Carrot kheer (Dessert)

CARROT KHEER (sweet purée)





1. Pressure cook 5 carrots in a diced shape adding 1/2 cup of whole milk with two whistles. Soak 1 tbsp of cashews in water separately.

2. Once pressure is released take them out allow it to cool and in a blender add the boiled carrots along with that milk , add the soaked cashews, 1/4 cup of brown sugar(can use white too) or honey. Blend them into purée.

3. Then in a sauce pan add the puréed carrots and to it add 1/2 cup of heavy cream, 1/3 tsp ice cream flavored essence (optional) , dash of saffron, mix well.. let it start cooking on low flame for 3 mins. Then add 1 tbsp of condensed milk.

4. Cook the above for 3 more mins and to it add 1/4 tsp of cardamom powder, dash of nutmeg powder ..

You can serve them warm or cold.. choice is yours..


You can add soaked almonds or pista instead of cashew..

You can alter coconut milk for health reason insteD of milk or cream..
