Broccoli pulav 🥦
This is very easy and a healthy recipe.
People who prefer or in low carb diet do skip the rice and use minced cauliflower along with broccoli or mince broccoli itself as rice and sauté with different variations and spices.
I am doing the indian method here.
METHODOLOGY:
1. Wash 2 cups of basmati rice and strain and keep aside.
2. Chop broccoli and put them in blender and pulse them and keep it aside.
3. In a small blender add 2 tbsp of grated coconut, 1/2 piece of cinnamon stick, 3 cardamom,1 tsp of fennel seeds(saunf) ,green chilies (3) and 1/4 piece of ginger .
4. Chop onions and Pecan nuts(its an option but u can also use routine cashews.. )
5. In a pan add 1 tbsp of ghee and 1 tbsp of olive oil and add 2 bay leafs,1 star anise and 1/2 cinnamon stick.
6. To it add the pecans and fry (you can also add the fried pecans at last for garnishing) then to it add the onions and sauté for two mins.
7. Add 1/4 tsp of turmeric and salt and then add 1 cup of boiled carrots and peas. Then Add the pulsed broccoli in it.
8. Then to it add 1 tsp of coriander powder and 1 tsp of garam masala powder and the powdered coconut mixture.
9. Sauté for 3 mins and add then add the rice and mix well and measure 4 cups of water and close with lid and cook on low flame.
10. Once it’s done drizzle with ghee and serve hot with any side dish or raitha.

Hi…Do you mean grinding raw broccoli or cooked?

Raw broccoli, as we are pulsing it, will get cooked easily.
