Achari Tindora & Peas Gravy

METHOD FOR ACHARI TINDORA & PEAS GRAVY

1. In a blender add 2 Red chilies , 3/4 tsp of pepper corns, 1 & 1/2 tsp coriander seeds , 1 tsp fennel seeds, 1 tsp of kasuri methi , 1/4 tsp of fenugreek seeds, 1/2 tsp mustard seeds. Blend them into a powder and keep aside . On the other side microwave sliced Tindora (kovakkai) on microwave for 5 mins.

2. In a pan add 1 tbsp of ghee, 1tbsp of olive oil and to it add 2 chopped onions and to it add 1 tbsp of minced garlic ( can use garlic paste )

3. Sauté for 3 mins and to it add sliced bell pepper ( any color, I used yellow) and add 1/2 tsp of turmeric and salt. To it add the cooked Tindora and frozen Peas. Cook for 5 mins by covering with lid on medium to low.

4. Now add 1 cup of tomato purée and add 1/2 cup of water.

5. To it add the grounded spice powder , 1tbsp of Mango pickle and stir and cover with lid and cook for 7 to 8 mins.

6. Add 1/3 cup of water and cook for 2 mins more and then add 1 & 1/2 tbsp of thick yoghurt and mix well. And allow it to cook for 3 mins.

7. Add chopped coriander leaves and now do the garnishing .

8. In a pan add 1 tbsp of ghee and to it add 1/2 tsp mustard , 5 to 6 fenugreek seeds, 1tsp of cumin seeds, 1 tsp of black sesame seeds, 1/2 tsp ajwain .

Just add 1/2 tsp of crushed kasuri methi to the gravy and pour the tempering on it. Then again add 1/4 tsp of ghee and to it add 2 cardamom pods and 1 tbsp of broken cashews and temper on the same..

A rich and tasty gravy is ready to go with Roti, Naan, paratha, Rice and pulav too.
