First of all I thought of making salad with these two vegetables but my husband wanted it as curry, so I thought ok I thought I can go for it.
So let’s jump in directly to the recipe instead of my blah blah.! 😬
Ingredients:
Bittergourd -1
Zucchini- 1/2 nos
Onion- 1
Olive oil- 3 teaspoons
Mustard -3/4th teaspoon
Urad dal – 1 teaspoon
Chana dal – 1 teaspoon
Coconut – 1 tablespoon
Turmeric – 1/2 teaspoon
Asafetida-1/2 teaspoon
Red chili powder- 1 teaspoon
Salt – as needed
Tamarind paste -1 teaspoon
METHODOLOGY:
1. Boil bittergourd and zucchini adding tamarind paste for 7 mins.
2. In a pan add oil , and to it add mustard, Chana dal, urad dal, onions. Sauté them by adding salt and turmeric.
3. Once you notice onions cooked add the boiled veggies and to it add the asafetida powder and red chili powder and toss well together.
4. After 3 mins add grated coconut and cook for 2 more mins.
Serve hot with rice.
