GREEN BEANS MILAGU KOOTU: (GREEN BEANS PEPPER DAL GRAVY)- (SOUTH INDIAN STYLE)

Beans kootu is a very simple and traditional tamil brahmin recipe. There are various ways and methods of making this one, including choosing different lentils to be added. The one that I have made is usually given to women after giving birth to a child in the household as post pregnancy food recipe. But, the only change i have done is i used different lentil variety as well added coconuts to it. This recipe or the method of making beans doesn’t take much time as well as healthy and tasty to consume. This is an excellent accompaniment for Rice, Dosa and even Chapathi (Indian crepe and flatbreads)

INGREDIENTS:

BEANS- 1/4KG/250GMS/1&3/4TH CUP (Chopped)

CHANA DAL / CHICKPEA SPLIT LENTIL- 1/2 CUP

TURMERIC-1/2 TEASPOON

PEPPERCORNS- 1 TABLESPOON

CUMINS-2 TEASPOONS

ASAFETIDA- 1/2 TEASPOONS

GRATED COCONUT / COCONUT PIECES- 2 TABLESPOON

RICE FLOUR- 2 TEASPOONS

SALT- AS NEEDED

FOR TEMPERING:

COCONUT OIL-2 TEASPOONS

GHEE-2 TEASPOONS

MUSTARD-1/2 TEASPOON

URAD DAL- 1 TEASPOON

CUMIN-1 TEASPOON

CURRY LEAVES – 5- 6 LEAVES

CORIANDER LEAVES / CILANTRO- 1 TABLESPOON

START:

1.Pressure cook the lentil by adding a pinch of turmeric and a drop of ghee and cook with 4-5 whistles.

2. Finely chop the green beans adding salt to it and cook for 8 minutes by covering it with lid.

3. Once it is done add the cooked dal and 1/4 cup of water.

4. In a mortar pestle grind both peppercorns as well the cumin into a coarse powder.

5.To the beans and dal add 1/2 teaspoon asafetida powder, 1/2 teaspoon turmeric as well as the grounded pepper and cumin powder. Mix well and allow it to cook on a low flame.

6.In a small blender add 2 tablespoons of grated coconut and to it add the rice flour powder and add 1/4 cup of water and grind it to a smooth paste.

7.Add this grounded puree or paste to the kootu and mix well. Let it stay for 4 minutes. By this time you could see the kootu thickening up.

8. Now add the curry leaves and coriander leaves if needed. ( This is optional)

9. Now for tempering in a separate iron cast pan or regular pan add the coconut oil mixed with the ghee and add mustard, urad dal, cumins to it and allo the mustard to splutter as well as the urad dal would be turned golden in color. Now garnish this to the kootu.

10. Transfer this to a bowl or vessel and serve this with rice and chapathi or dosa.

NOTE:

  1. Usually Moong dal (Split lentils) are used for this kootu. I tried using chana dal for a change. you can choose to use what you are used to or what you like to use.
  2. If you don’t have grated coconut use even the scrapped or dry pulp or whole coconut cuttings or even the desiccated coconuts.
  3. Adding rice flour is to thicken the mixture, and also its easy when grounded with coconut it won’t form lumps while adding to the kootu of not it might form lumps here and there. Or the usual method of adding the rice flour separately is by mixing it with lukewarm water and slowly adding to the recipe by stirring it with one hand and keeping the flame low.
  4. It is not necessarily you have to grind the pepper and the cumin in mortar pestle and you can very well use the blender too to grind them. Either coarse or fine. Choice is yours. I like the coarse method while adding peppers so i did this way, as well grinding using the pestle has an authentic touch.
  5. As i have mentioned earlier that i did not have curry leaves as well cilantro so i didn’t use it. You can add if you have. Adding them adds and excellent flavor to the dish.
  6. You can also temper only with coconut oil in my households they use coconut oil for all the kootu varieties.
