Cluster beans curry (Kothavarangai thengai curry)

One of the green beans variety or family I would say is the cluster beans.

You have many varieties to make with this one. But I preferred to make this South Indian poriyal/ curry with coconut.

Let me get into the recipe.

INGREDIENTS:

Cluster beans- 1/2 lb

Oil – 2 teaspoons

Mustard – 3/4 teaspoon

Urad dal -1 teaspoon

Turmeric – 1/2 teaspoon

Red chili powder -1 teaspoon

Asafetida -1/2 teaspoon

Salt – as needed

Grated coconut – 1/2 tablespoon

METHODOLOGY:

1. Wash and chop the cluster beans and boil it on the pan for 8 mins by covering it with the lid. Add salt while boiling.

2. Strain and then in the same pan add oil, add mustard, urad dal and let it change the color. Then add the boiled beans and then to it add turmeric , asafetida, red chili powder and toss together. Then add grated coconut and cook for two more mins.

3. The vegetable is ready, and serve it hot with rice.
