Who won’t say no to Potato curry.!
Instead of the regular potato curry I added some boiled carrots to it, and tossed it with some spices.
It’s quite easy and tasty too and kids will love this.
I made it as chunks but if you want you can chop it well into small pieces and do the same.
Let’s jump into the recipe.
Ingredients:
Potato- 4
Carrots -1
Turmeric powder -1/2 teaspoon
Red chili powder-1/2 teaspoon
Rasam powder- 2 teaspoons
Asafetida powder- 3/4 teaspoon
Garlic powder -1 teaspoon
Salt – as needed
Kasuri methi -2 teaspoons
Olive oil – 1 & 1/2 tablespoons
Ghee- 2 teaspoons
Mustard-3/4th teaspoon
Urad dal-1 teaspoon
METHODOLOGY:
1. Pressure cook potatoes and carrot and boil with one whistle. Once pressure is released allow it to cool down, remove the skin and dice it and keep them ready.
2. In a pan add oil, mustard and urad dal. Add the boiled potato and carrots and to it add the salt, turmeric, chili powder, asafetida powder, garlic powder and the Rasam powder and toss them well.
3. Cook for 3 mins and then add kasuri methi and toss. Add the ghee and keep it on medium flame and cook for 3 more mins. And serve hot with rice.
