Ingredients
Sooji/ rawa-1/2 cup
Mango pulp-1/2 cup
Water -1 1/2 cup
Sugar-1 cup
Yellow color- a pinch
Salt-1/3 tsp
Cardamom powder- 1/3 tsp
Saffron- a little
Cashews-6
Raisins-6
Ghee-1/4 cup
Method:
In a pan add ghee and fry the cashews and raisins and keep them aside.
Then in the same pan with the left over ghee fry sooji well.and keep it aside.
Purée the mango and keep them aside.
In the same pan add the water and salt and allow it to boil.
Then add the mango pulp to it and then slowly add the roasted sooji.
Then after couple of mins add yellow color and then add sugar to it.
Add a teaspoon of ghee and mix well.
Then add cardamom powder,saffron and roasted cashew & raisins and mix well.
Then add the balance ghee and serve them hot.!
(I would suggest you to add mango essence for a flavoursome smell and taste. )
(And let sooji gets cooked well before adding sugar)
(You can use banganapali mango. Here in US it’s not great in taste as season has just started)
