RED LENTIL & VEG COCONUT MILK SOUP:
Ingredients
Red lentil-1/2cup
Onion-1
Tomato-1
Carrot-1
Garlic-2 cloves
Ginger-little(grated)
Turmeric-1/4tsp
Salt as needed
Sesame seeds-1/2tsp
Coconut oil-4tbsp
Coconut milk-3/4 cup
Paprika powder-1/4 tsp
Pepper powder-1/2 tsp
Chaat masala- a dash(optional)
Dill leaves-handful chopped finely
Dried parsley
Dried basil
Garnishing:
Carrot,cabbage,purple cabbage thinly sliced(1tsp)
Grated coconut-1tsp
METHOD:
Pressure cook red lentil,onion,garlic,carrot,tomato,salt ,turmeric in thin coconut milk. Allow it to cool and the blend into purée.!
In a pan add coconut oil,toss sesame seeds..when it turns in color strain the purée and add it to the pan and toss in some paprika powder,pepper powder,dried parsley and dried basil..
Then add 1/4 cup of coconut milk and make it creamy..!
Grate in some fresh ginger and drizzle some dill leaves which add on an amazing flavor and aroma.! And then switch off the flame..add on the bowl and drizzle coconut oil.. then grated cabbage,carrot and coconut and a little dill leaves and serve hot..! A delicious creamy and healthy and filling soup is ready.! Enjoy a warm,mild spiced dinner.!
*dill leaves are good for health but if u don’t have u can also replace with coriander leaves or any seasonings like oregano,parsley,basil..
or even parsley leaves.. all are easily available in Indian vegetable shops too. And not expensive.!
* if u don’t want to add garlic u can skip that.
*squash can be added to this.
