Punjabi khadi

Today wanted to have this khadi and haven’t made this for years and a sudden craving for it.. a very easy and quick recipe ..

Instead of onion pakora you can also add paneer or veg pakora..

The traditional Punjabi khadi is a sour curd or dhahi mixed with chickpea /gram flour paste with mild spices and tadka..

Ingredients:

For onion pakora:

Onion sliced-1/4 cup

Besan flour-2tbsp

Rice flour-1tbsp(optional)

Red chili powder-1/2tsp

Turmeric-1/4 tsp

Salt as needed

Water-to sprinkle

Oil-for frying

For purée:

Besan flour-1/4 cup

Yoghurt-3tbsp

Turmeric-1/4tsp

Green chili-1/2

Red chili powder-1/2tsp

Ginger garlic paste -1tbsp

Salt as needed

Water

For tadka:

Oil-1tbsp

Mustard-1/4tsp

Red chili-1

Fenugreek seeds-1/3tsp

Cumin-1/4 tsp

Cinnamon -1

Onions-1/2 chopped

Coriander leaves

Method:

In a bowl mix the pakora items drizzle with water and make pakoras out of it and keep aside.

Then whisk the purée items and keep aside.

Then in a pan add the tadka items and sauté for two to three mins.

Then to it add the gram flour purée and then cook on low for 15 mins by adding 1/2 cup of water.

Then after 15 mins the consistency will thicken and then drizzle with chopped coriander leaves and the fried pakoras and serve hot with rice or roti.!
