Vegetable handi is packed with lot of vegetables and paneer(optional though)
And a recipe I loved it from Rajshri foods..
Let’s go to the recipe
Ingredients
Vegetables- carrot,beans,green peas,sweet corn,cauliflower(1/2 cup)
Grated paneer-1/4 cup
Mushrooms-1/4 cup
Onions-1 big
Ginger Garlic & green chili paste-2tbsp
Tomato purée -1/2 cup
Lemon
Oil-1tbsp
Cumin-1/2tsp
Bay leaves-2
For masalas:
Turmeric-1/4 tsp
Chili powder-1/2tsp
Coriander powder-1 tsp
Garam masala powder-1 tsp
Butter- a cube
Oil-1tsp
For topping:
Curd-1/2 cup
Fresh cream-2tbsp
Mint leaves
Coriander leaves
Method:
In a pan add oil,cumin,bay leaves and the chopped onion..
Then to it add the garlic,ginger and green chili paste and sauté till the raw smell leaves and then add the tomato purée and cook until the water evaporates and the masala is ready.
To this add turmeric,salt,chili powder,coriander powder and garam masala and cook.
Then to it add a chunk of butter and oil..
Then add the mushrooms to it and then the mixed boiled vegetables to this.
Then to it add half cup of water and then allow it to boil for 5 mins covering up with lid.
Then add the cream topping by mixing curd and cream together.
Then add finely chopped mint leaves and coriander leaves to it.
Drizzle with some grated paneer and lemon juice..!
I added a chunk of butter again and then garnished with full cream,paneer grated and coriander leaves.
Such a delicious dish to go well with pulav,roti,paratha,parota..!
Just loved this.. and I added paneer out of my choice.
You can add any vegetables and paneer of your choice.
