Eggplant & Paneer Creamy curry





All that I did was 👇🏾

1. Boiled 2 cups of cabbage and puréed it .

2. In a pan I added 1 tsp of oil and sautéed small chunks of eggplant, and kept it in a plate. Then sautéed paneer in the same pan and seperated

it, then 1/2 orange bell pepper and kept separately.

3. Then added 2 tsp of oil to the same pan and added back the bell pepper and to it I added cabbage purée and 1 cup of tomato purée and 1/2 cup of water ..

4. Then added 1/2 tsp of turmeric, 1 tsp of Kashmiri red chili powder, 1/2 tsp of pepper powder, 1 tsp of coriander powder, and salt and allow it to boil by covering the lid say it for 5 mins.

5. Now after 5 mins add Punjabi garam masala powder and the sautéed egg plants and paneer.

Then add 1 tsp of crushed kasuri methi

6. Then after two mins add 2 tbsp of heavy cream and let it sit for 3 mins.

7. Temper 1/2 tsp of mustard, 1 tsp of cumin and 1/2 tsp of carom seeds in 1 tbsp ghee..

Serve hot with rice, pulav, roti ,naan,or even dosa.!
