SAMBAR RICE :
Quick Method I follow always 👇🏾
1. For 1 cup of Raw rice , add 2 tbsp of thuvar dal.. pressure cook with four whistles and allow the pressure to be down.
2. In a pan add 1 tbsp of oil, 3/4 th mustard seeds, 1/4 tsp of fenugreek seeds, and 1 green chili.. then add veggies like onions (shallots will be great too) , carrot, brinjal, beans, peas , potato and sauté well.
3. Add 1 & 1/2 cup of tamarind water , 1/2 tsp of asafetida, 1/2 tsp of turmeric powder & 1 &1/2 tbsp of sambar powder and salt.. allow it to boil for 7 to 8 mins and meanwhile add 1 tbsp of homemade curry powder . Mash the rice well and add to the sambar and stir well..
4.To the above rice add 1 tbsp of coconut , 1/2 tsp of homemade curry powder, curry leaves and heat 2 tbsp of sesame oil (gingely oil) & 1 tbsp of ghee and pour it on the rice..
5.Add roasted cashews too with it if interested to give a rich texture and serve hot with Potato curry, potato chips/applam/vathal or with raitha too.. .
