Ingredients for ‘Drumstick leaves Poriyal’
- Drumstick/murungai leaves-one set
- Onions-1 big
- Coconut -2tbsp
- Mustard-1/4tsp
- Urud dal-1/4tsp
- Asafetida powder
- Turmeric powder-1/4tsp
- Red chilies-3
- Salt
Steps to make:
In a pan add oil, red chilies,mustard,urud dal and sauté them. and add chopped onions,and add turmeric,salt,asafetida..now add the washed drumstick leaves and sauté well and then add the grated coconut and toss them for 2 minutes and switch off the flame..
Ingredients for ‘White radish Sambar’:
- Thuvar dal-1/2cup
- White radish-1
- Onions-1
- Tomato-1
- Green chili-1
- Asafetida- small piece
- Sambar powder-1/2 tsp
- Chili powder-1/4tsp
- Rock salt
- Tamarind Paste-2tbsp
- Curry leaves
- Coriander leaves
- Mustard-1/4tsp
- Fenugreek seeds-1/4tsp
- Rice flour-1 tsp
How to make:
Pressure cook thuvar dal and keep it aside..In a pan add oil..add mustard,fenugreek seeds,green chili,curry leaves..add onions,tomatoes,radish and sauté them.. now add turmeric,asafetida and rock salt..now add the tamarind paste water and allow it to boil for 5 minutes.. now add sambar powder,red chili powder and allow it to boil for 10mins..
Add the mashed dal and allow it to boil in medium flame for 5 minutes.. now garnish with coriander leaves and drizzle with a spoon of ghee and serve them hot with rice or idly or dosa.
Ingredients for Palak paneer:
- Paneer-1 cup
- Palak-1 set
- Onions-1
- Tomatoes-1
- Green chilies-2
- Ginger garlic paste-1tbsp
- Sugar- a pinch
- Turmeric-1/3tsp
- Kasuri methi-1/4tsp crushed
- Coriander powder-1/2tsp
- Garam masala-1/2tsp
- Salt
- Lemon-1/2
- To temper: Ghee-2tsp
- Sesame seeds-1/4tsp
- Cumin seeds-1/4tsp
How to make:
In a add oil and add onions and ginger garlic paste and sauté them.. on the other side boil the palak for 5 minutes and grind them into paste adding the green chilies..then to the onion pan add tomatoes and add turmeric and coriander powder and salt..sauté them for 2 minutes and then add the grounded palak paste and add some water and allow it to boil by adding a pinch of sugar and cover it with lid.. then after 7 minutes add garam masala powder and sauté for two minutes.. then now add the cubed paneer and mix them well..add crushed kasuri methi and squeeze the lemon juice and just toss for a minute and then temper it with cumin and sesame seeds..
Note – adding sugar will not change the color of the greens. You can add fresh cream to the palak. You can also substitute lemon with chat masala powder.
