Ingredients:
Potato-1 big
Cauliflower-1 cup
Tomato -1
Onion-1
Capsicum-1
Ginger grated-1/2tsp
Minced garlic-1/2tbsp
Turmeric-1/4tsp
Salt-1 tbsp
Red chili powder-1/2 tsp
Coriander powder-1/2tsp
Cumin-1/4tsp
Garam masala powder-1/2tsp
Amchur/ dry mango powder-1/4tsp
Sesame seeds-1/4tsp
Carom seeds/ajwain/omam-1/4tsp
Oil-1tbsp
Ghee-1/2tbsp
Coriander leaves
Method:
As it’s a quickie method I jus took pressure cooker and diced all the above vegies and inter cooker add some oil,then add grated ginger and minced garlic. Sauté for a min and then add the onions and capsicum.
To it add turmeric,salt and chili powder and sauté for couple of minutes on high.
Then to it add the tomato and the other powder ingredient mentioned above.
Then sauté them for two more minutes and then add the potato and cauliflower and add some water for pressure cooking.
Then close the lid and pressure cook for two whistles and then wen the pressure is released add corn flour mixed with water to thicken the consistency of the gravy.
(You can also replace water with tomato purée or at last instead of corn flour you can try adding cream or cashew paste for extra richness.
I wanted to keep it simple)
Finally add coriander leaves and then garnish with sesame and carom seeds.
Serve hot with phulka,naan,dosa,rice and delicious with curd rice too.!
