Udupi kuzhambu

Ingredients

Potato-2

Onion-1

Carrot-1

Toor dal-1 cup

Tamarind paste-1tbsp

Turmeric-1/4tsp

Chili powder-1/4tsp

Rock salt -1tsp

Asafetida-1/4tsp

Jaggery-1/2tsp

Curry leaves

Oil-1tsp

Ghee-1tsp

To fry and grind:

Red chili-2

Coriander seeds-1/2tsp

Urud dal-1tsp

Fenugreek seeds-1/4tsp

Ginger- a small piece

Coconut-2tbsp

Tempering:

Oil-1tsp

Mustard-1/4tsp

Red chili-1/2

Fenugreek seed-1/4tsp

Method:

Pressure cook toor dal and mash it and keep it aside.

In a vessel add potato and carrot and onions and add water and allow it to boil.

In a pan add oil and add the fry and grind items and then add in blender along with coconut and then make it as a paste.

Then to the vegies boiling in the vessel add turmeric,asafetida,salt,jaggery.

Then add curry leaves and the grounded paste to it..

Then let it boil for 5 minutes and add the toor dal to it and then add the rice flour paste a little to it and allow it to thicken and then drizzle a spoon of ghee to it.

Now add the tempering to the kuzhambu.!

If you like add the coriander leaves to it..

A delicious kuzhambu is ready.. the native of this kuzhambu is karnataka.. they make it little sweeter. If you prefer please add some more jaggery to it.

Enjoy them with hot rice,idly,dosa.!
