Brinjal podithuval is making baingan/kathirikai curry with the home ground spices.. and it can be done as muzhu kathirikai poriyal (whole brinjal stuffing)
Ingredients:
Brinjal-100 gms
Oil-3tbsp
Turmeric-1/4tsp
Asafetida-1/4tsp
Chili powder-1/4tsp
Salt as needed
Mustard-1/4 tsp
Urud dal-1/2tsp
Curry leaves
Fry and grind:
Oil-1tsp
Red chili-3
Chana dal-2tsp
Pepper corns-4 to 5
Coriander seeds-1 1/2tsp
Asafetida-1/4tsp
Method:
Fry the items said in the fry and grind column and allow them to cool. Then bring them into coarse powder and keep aside.
Slice brinjal and boil it for 5mins and then strain it.
In a pan add oil,mustard,urud dal,curry leaves.
Add the boiled brinjal and to it add asafetida,turmeric,chili powder,salt and the grounded curry powder.
Sauté for 3 mins. And the poriyal is ready.
Very tasty to mix with rice and eat and best with sambar rice,rasam rice and curd rice.
