Recipe for Bhatura:
Ingredients:
All purpose flour/Maida-1 cup
Semolina/Rawa-2tbsp
Curd-1/2 cup
Salt as per taste
Baking soda- a pinch
Yeast(optional)
Oil- for frying
Method:
Mix all the ingredient and cover it well with a muslin cloth and keep it aside for 3 hours..
Then when it’s time roll it into a big round shaped roti and deep fry it.
Serve hot with spicy Chole masala and raita.!
Recipe for chole masala:
Ingredients:
White channa-1 cup
Onion-1
Tomato purée -1/2cup
Ginger garlic paste-1tbsp
Turmeric -1/4tsp
Red chili powder-1 tsp
Coriander powder-1tsp
Chole masala powder-2tsp
Dry mango powder-1/2 tsp
Salt as needed
Coriander leaves
Lemon-1/2
Ghee-2tbsp
Cumin-1/2tsp
Sesame seeds-1/4tsp
Ajwain-1/4tsp
Method:
Soak Chana over night and pressure cook for a whistle or two by adding turmeric and raw mango(if needed) for flavor..
Then in a pan add 1tbsp ghee and add cumin,onion and ginger garlic paste. Sauté it for 2 to 3 mins.
Add turmeric,salt and red chili powder..
Then to it add the tomato purée and 1/4cup of water.
Add coriander powder and the Chole masala powder and the boiled chole water and the chole to it..
Cover it with lid and cook for 5 to 7 mins..
Then add dry mango powder and cook for a minute.
Add coriander leaves and lemon.
Then with the balance ghee do the tadka by adding sesame seeds and ajwain to the masala.
Sesame seeds and ajwain are good for digestion as this Chana has the tendency for bloating and excess formation of gas in stomach those two ingredients helps us for digestion too..
While serving you can add sev,chopped onions and a piece of lemon.
