Methi chaman

Chaman is a Kashmiri word for paneer and this is a Kashmiri dish made from Methi leaves(Fenugreek leaves)

Its a no onion and no garlic recipe..

Ingredients

Fenugreek leaves(Methi) -1 cup

Palak leaves-1 cup

Mint leaves(Pudhina)-1/2tsp(finely chopped)

Paneer-1/2 cup

Curd-1/2 cup

Heavy cream-1/4 cup

Green chili-1

Fennel seeds-1tsp

Cinnamon-1 stick

Bay leaf-2

Star anise-1

Cardamom-3

Turmeric-1/4tsp

Coriander powder-1tsp

Cumin powder-1tsp

Kitchen king masala-1tsp

Kasuri Methi-1/2tsp(crushed)

Ghee-1tsp

Method

Blanch Methi leaves and palak and wash well and boil in water for 3 mins..

Then wash it well in cold water and purée it by adding a green chili..

Then in a pan add ghee and then add the ground spices and then add the purée to it..

Add turmeric,salt,and other masala powders ,chopped mint leaves and cover with lid and cook for 5 mins.

Add curd and heavy cream to it now..

Then add paneer and kasuri methi to it..

Cook for 2 more mins and serve hot with roti,phulka,rice or pulav..

You can add Kashmiri red chili powder and Kashmiri garam masala powder for the authentic touch..
