Carrot kosmalli/koshumbari(carrot salad)

Very simple and tasty and healthy salad made in many parts of India..

It has easily available ingredients.

As we all know Carrot is a root vegetable . They are sweet and crunchy. A beautiful enhancing orange color.

It has vitamin A and contains antioxidants which may protect against cancer and they are good for vision.

This salad is packed with proteins as it has moong dal, coconut and if needed we can added raw mango and cucumbers too.

INGREDIENTS:

  • Carrots-1 cup (shredded )
  • Moong dal-2 tbsp (soaked)
  • Green chilies -2
  • Coriander leaves – a little
  • Coconut -2 tbsp(grated)
  • Salt as needed
  • Lemon -1/2

METHODOLOGY:

  • Peel the carrots and shred them
  • In a bowl add the shredded carrots,salt,green chilies,coconut and lemon juice.
  • Mix the above and add coriander leaves and store in refrigerator and serve chill
  • Enjoy eating as it is or with food.
