Paneer tikka Muffins

PANEER TIKKA MUFFINS (in almond four)

Wanting to make paneer tikka as well as I was bored with the routine method. So thought I can make some baking work with this one.

And the method worked. Just give it a try.

I did not want it to be with any white flour so baked with almond flour. If you don’t have almond flour try adding some maida and rice flour.

A quick recipe ⬇️

1. Preheat oven at 375f and keep the muffin trays ready with muffin cups.

2. Chop in a big onion ,tomato and bell pepper and paneer too.

3. In a pan add 2 tbsp of olive oil and to it add the veggies and paneer and to it add 1/2 tsp of turmeric, 1 tsp of Kashmiri red chili powder,1tsp coriander powder,1 tsp cumin powder,1/2 tsp pepper powder,1 tsp kitchen king masala powder, 1tsp kasuri methi and sauté well for two to three mins.

4. Squeeze in lemon juice and keep the mixture ready.

5. Then in a bowl add 3/4 th cup of almond flour and to it add the mixture and blend well. Add 1 tsp of baking soda.

6. Fill in the muffin trays with the mixture and top it with grated cheese and then bake for 35 to 40 mins.

ADD EGGS TO GET THE FLUFFY MUFFINS. I dint add in here. It was great. Try baking for extra 5 mins or don’t remove from oven or take the muffins out immediately and allow it to settle.!
