Palak kofta curry

PALAK KOFTA CURRY (spinach dumplings in creamy gravy)

FOR DUMPLINGS:

Sauté 1 big onions, 2 green chilies,1/4 piece of ginger, 1tbsp of minced garlic (or 3 garlic clove) , 2 cups of spinach and once done grind them into a thick purée ( not runny)

Then to it add 1/2 cup of grated paneer(cottage cheese) ,3 tbsp of gram flour, 1/4 cup of potato (or bread) , salt,1 tsp of garam masala powder, and blend well and make it as a dumpling by applying oil on hands and roll that in corn flour and deep fry them.. ( I couldn’t get the consistency so I dropped the batter with spoon and fried it)

FOR GRAVY:

Sauté by adding 2 tbsp of olive oil and to it 1 tsp of cumin, 1 tsp of fennel seeds, 1 tsp of kasuri methi and 1/2 tsp of turmeric powder, 3/4 th tsp of red chili powder. Once sautéed add 1 big chopped onions, and to it add 1 cup of tomato puree( 3 tomatoes ) and allow it to boil by covering the lid and cook for 10 mins and then to it add 1 tsp of kitchen king masala powder and 1/2 cup of heavy cream.. then add the fried dumpling (koftas) to it.

Add 2 tbsp of grated cheese and simmer it and add 1/2 chunk of butter and the hot kofta curry is ready to serve with phulkas,roti,poori,rice.!
