An easy and scrumptious sambar (South Indian style) well goes with Idly, Dosa & Rice too.!

INGREDIENTS:

Moong dal -1 cup

Onions- 1 big

Tomato -1 big

Brinjal -1 or 2

Potato -1 big or 2

Home made curry powder -2 tbsp

Green chili-1 long

Ginger -1/4 piece

Oil -2 to 3 tsp

Mustard -3/4 th tsp

Fenugreek seeds-1/4 tsp

Thuvar dal -1/2 tsp

Curry leaves – an arch

Coriander leaves – a little

Turmeric -1/2 tsp (for sambar) , a pinch for dal

Salt as needed

Asafetida -1/2 tsp

Ghee -1 tbsp

METHODOLOGY :

A quick step to the recipe:

β€’ Pressure cook 1 cup of moong dal adding a pinch of turmeric with four whistles and mash well and keep aside.

β€’ In a pan add 2 tsp of oil, then to it add 3/4 th tsp of mustard, 1/4 tsp of fenugreek seeds, 1/2 tsp of thuvar dal, An arch of curry leaves.

β€’ To it add 1 long green chili, 1/4 piece of finely chopped ginger, 1 diced onion , 1 diced tomato, 1 brinjal & 1 potato(boiled) .. SautΓ© well for a minute.

β€’ Then add 2 cups of Tamarind water & add 1/2 tsp of asafetida powder, 1/2 tsp of turmeric powder, salt as needed.

β€’ Allow it to boil for 5 mins and then to it add 2 tbsp of homemade curry powder ( check my blog page for the recipe for the curry powder)

β€’Then add the mashed Dal and let it cook for 5 more mins on low flame and to it add chopped coriander leaves and a tablespoon of ghee.

β€’ Serve hot.. this is soo good and tasty and you can also add a tsp of jaggery and can substitute thuvar dal instead of moong dal.!
