Semiya veg kichdi

Method:

You can first boil vermicelli and then do it or boil together while making it. Choice is yours.

1. In a pan add 3 tsp of oil, to it add 3/4th tsp of mustard & 1 tsp of urud dal.

2. Add one green chili (long ones) and 1 chopped onions. And some curry leaves.

3. Sauté for two mins by adding salt and 1/2 tsp of turmeric powder. Then add the mixed veggies like beans, carrot, peas, corn etc.. and sauté for a minute more.

4. Add 1 cup of vermicelli and stir. Then add 1 &1/4 cup of water and allow it to get cooked for 5 mins on medium to low flame. Don’t burn it..

5. Adding more water will make it gooey.. if you want fine texture just add the right amount.

6. Then after it’s cooked add lemon juice and chopped coriander leaves.

7. Serve hot with coconut chutney… I ADDED SOME ROASTED PEANUTS TO THE REGULAR COCONUT CHUTNEY. It gives a good taste.. try out.
