Brussels sprouts coconut curry

Brussels sprouts coconut curry:

1. Slice and cut into half the washed Brussels sprouts and then boil them for 10 mins

2. In a pan add 2 tsp of oil and to it add 3/4th tsp of mustard seeds, 1 tsp of urud dal and add chopped onions (1. Number) and then sauté it for two mins.

3. Add 3/4 th tsp of asafetida powder, salt, 1/4 tsp of turmeric powder, 1tsp of chili powder, 1tsp of coriander powder and sauté for two mins.

4. Add the boiled veggie to it and toss together. Then add 2 tbsp of grated coconut and cook for 2 more mins.

Remove from flame and serve hot with rice or can also have it as it is.

NOTE:

You can add garlic pods or paste to it.

You can skip onions here.

And also can skip coconut if you are not ok with adding it.

Tomatoes can be added.

Can also add some finely chopped spinach.
