Pumpkin & Zucchini pudhina milagu paal kootu :
Basically I had half cut pumpkin which I dint want to waste 😅 , secondary I always like cucumber kootu but as I had Zucchini I thought of adding it.
Milagu paal kootu (pepper milk kootu) my mother in law used to make.. I just added mint leaves to it.
So let’s go to this quick method:
1. Pressure cook 4 tbsp of moong dal by adding pinch of turmeric and mash them well and keep aside.
2. In a pan add diced pumpkin and zucchini add water and 1/4 tsp turmeric and salt to it. Allow them to boil for 10 mins . Meanwhile grind 2 tbsp of grated coconut, 1 small cup of washed fresh mint leaves, 2 tsp pepper corns, 1 tsp cumin. Grind them into a paste by adding 3 tbsp of milk.
3. Add 1/2 tsp asafetida to the veggies and then add the mashed dal and the grounded paste. Cover with lid and cook on medium flame for 5 to 7 mins.
4. Add 3/4th tsp of Sukku powder(dry ginger) to the kootu.
5.Temper in 1 tbsp ghee by adding 3/4th tsp mustard seeds, 1tsp urud dal, 1tsp sesame seeds.
Serve hot with rice, dosa or chapati.
Skip pudhina (mint leaves) if you don’t want.
Add chilies instead of pepper (of course name denotes pepper here but it’s our cooking so do what you prefer)
Anyone out there has lactose allergy please don’t add milk. Can substitute with coconut milk.
You can use any vegetable of your choice for this kootu.
