Pumpkin poriyal

Ingredients

White pumpkin -2 cups

Mustard-1/4tsp

Urud dal-1/2tsp

Coconut grated -1/2 cup

Turmeric-1/4tsp

Rock salt-1tsp

Red/green chili-1 big

(If red then 2)

Asafetida-1/4tsp

Curry leaves

Coconut oil/ghee-2tbsp

Method:

In a bowl add diced pumpkin with salt and turmeric and add water and allow it to boil.. if using microwave then boil it for 6 minutes in high.

Then in a pan add ghee/oil add mustard,urud dal,curry leaves and red chili/green chili and sauté.

Then add the boiled pumpkin and sauté it for two minutes.

Then add grated coconut and then sauté for 2 minutes and remove from flame and serve them hot with rice.
