Ingredients:
Vegies like carrot,colacassia,potato,pumpkin,beans,chow chow-2 cups
(Can add peas,broad beans,white pumpkin etc)
Coconut-1 1/2tbsp
Green chili-1 big
Cumin-1tsp
Ghee-1tsp
Coconut oil-1tsp
Mustard-1/4tsp
Urud dal-1/2tsp
Curry leaves
Turmeric-1/4tsp
Curd-2tbsp
Rice flour-1tsp(optional)
Method:
In a vessel add all the vegies,water and turmeric ,salt.
Allow it to boil for 10 mins.
Then in a blender grind coconut,chili and cumin together into smooth paste and add it to the vegies and then add curd to it..
Let it sit for 5 mins and add rice flour if needed.
Add plain coconut oil to the dish.
Temper with mustard ,urud dal and curry leaves.
*can also add coconut milk instead of curd.
