Cauliflower is a healthy vegetable and it’s low in carbohydrates and calories and it’s great for health and benefits a lot.
We can substitute cauliflower for rice and it’s vegan,gluten free,keto and paleo staples..
We can make cauliflower rice,stir fries,southindian sambar ,upma,Baked cauliflower and curries or gravies too.!
Let’s jump on to the recipe.!
Ingredients:
Grated cauliflower-2 cups
Onion-1 big
Mixed veg-carrot,beans,bean,peas(anything of your choice)-1/2 cup
Ghee-1tbsp
Cinnamon-1 stick
Star anise-1
Fennel/saunf-1tsp
Cardamom-2
Green chili-1
Chopped ginger-1tsp
Garlic-1tsp
Coriander leaves
Garam masala powder-1tsp
Salt as needed
Method:
Cook grated cauliflower in microwave for 5 mins on high.
Then add ghee to the pan and the ground masala.
Add green chili,garlic and ginger.
And sauté for a min.
Then add the chopped onions and salt.
Meanwhile boil the vegies in microwave for 6 mins and then strain them and add it to the onions.
Add garam masala powder.
Then add the cooked cauliflower and sauté it for 2 mins and keep it on low for a min more.
Garnish with chopped coriander leaves and a teaspoon of ghee.
