Almond coconut chocolate cookies

I have come up with this “gluten free, Low carb ,Keto cookies 🍪

As my husband goes with this diet I thought I can make some cookies like how I made the muffins last time.

This is simple and easy as well.

All you need is these ingredients

Yes this is going to be little bitter coz of unsweetened items that will be on the ingredients list so let’s jump on to the recipe

INGREDIENTS

Almond flour -2 cups

Coconut sugar-1 cup

Unsweetened 100% coco -1 tbsp

100% unsweetened dark chocolate -4 pieces (finely chopped)

Eggs-3

Vanilla essence (gluten free) -2 tsp

Almond essence (gluten free) -1 tsp (option)

Dry grated coconut -2 tbsp

Butter-4tbsp(1/4 cup)

Baking powder-1 tsp

METHODOLOGY:

1. Preheat oven at 420f

2. In a bowl add 3 eggs, and to it add butter slightly melted and beat them well.

3. Add baking powder and coconut sugar and blend well without any lumps.

4. Add unsweetened coco powder and finely chopped dark chocolates and mix well.

5. Now add the almond powder (meal powder)

6. After whisking everything together and when it reaches dough consistency cover with transparent sheet (cling wrap) and refrigerate for 15 mins and then scoop them and place the cookies on the cookie sheet spreaded with butter sheet as a layer

7. Bake for 12 to 15 mins.

8. A healthy gluten free and guilt free yummy and chocolaty gooey chocolate cookies are ready to munch.

People in these kind of diet can enjoy they snacky time .. steal it and crunch it. No need to be conscious or sneaky about the cheat day.

Note:

If you don’t like chocolate plz make the plain one buy adding the other ingredients and these will taste yum.

Substitute butter with coconut oil or olive oil too.
