Coconut milk is very healthy and delicious ,they are extracted from coconuts. It is a traditional food ingredient used in Southeast Asia, South Asia and the Northern America.They taste great and has many health benefits. They are a wonderful substitute for cow’s milk.
They have thick and rich creamy texture and adds a wonderful taste when added in recipes.
I have made the regular moong dal kootu with coconut milk with very simple ingredients.
Lets get on to the recipe for the Kootu now.
INGREDIENTS:
- Green Beans-1 1/2 cup
- Moong dal-1/2 cup
- Thin coconut Milk-1/2 cup
- Thick coconut Milk-1/2cup
- Pepper corns-1tsp
- Cumin’s-1tsp
- Dry Ginger Powder-1tsp
- Turmeric-1/2tsp
- Salt as needed
- Asafetida-1/2 tsp
TEMPERING:
- Coconut Oil-2tsp
- Mustard’s-1 tsp
- Urud dal-1 tsp
- Red Chilies-1
- Curry leaves- an arch
- Pepper Corns-5 to 6
- Black Sesame seeds-1/2 tsp
- Cumin’s-1 tsp
METHODOLOGY:
1.Pressure cook Moong dal with four whistles and take it out once the pressure is released and keep it aside.(add turmeric while cooking the dal)
2.Wash and cut beans and then cook them with Thin coconut milk by adding turmeric and salt to it.
3.Crush Pepper,cumin’s with pestle.
4.Add it to the kootu and then add Dry ginger to it and add the mashed dal.
5.Allow it to cook on low and then after two mins add the thick Coconut Milk.
6.Let this cook on low flame so that you wont burn the dish.
7.Now Once the mixture thickens remove it from flame and temper with the ingredients mentioned below the temper list.
8.Serve hot with Rice,Idly,Dosa
NOTE:
- I used pestle to crush the pepper and cumin. You can use mixie or blender to do the same.
- You can also add garlic or onions if you prefer. I kept it simple according to my own taste.
- You can also add Mint leaves to this to enhance the taste.
- And its not necessary we need to add only Green beans.Any veggie can be substituted instead.
- I added Sesame seeds for a flavor enhancement .You may skip it.
