Aval upma (poha)

Aval upma (poha / flattened rice )South Indian style.!

1. Wash the flattened rice in water and strain it. And keep aside. (Some will prefer to soak. But I don’t)

2. In a pan add 1 tbsp of oil and to it add 1 tsp of mustard , 1 tsp of urud dal and 2 green chilies & 1/4 piece finely chopped ginger . Add an arch of curry leaves too.

3. To it add 1 big chopped onions and needed salt (optional , if ur not adding onions just add 1/2 tsp of asafetida)

4. Now once the onions are sautéed then add the flattened rice to it and gently toss them.

5. After two mins add 1 tbsp of grated coconut.

6. Finally drizzle with 1 tsp of coconut oil.

Serve hot with sambar/chutney /even sugar will be good to go.

NOTE:

I used 2 cups of flattened rice .

You can add red chilies instead of green .

You can also add turmeric and lemon. There are different variations .

As i mentioned earlier if you don’t want to add onions skip them and instead add asafetida.
